Preparing winter holiday meals can be stressful, so I am excited to share this really easy, super delicious vegan Thanksgiving menu with you. Throughout November, this festive vegan meal will be the featured menu in our Season Ten, Jazzy Vegetarian Vegan Thanksgiving Television Special on several stations across the country!

This delightful menu is vegan and gluten-free, so it’s great to serve to please your family and friends with varied tastes. Plus it’s really easy-to-prepare, leaving plenty of time for you to have fun at the party too!

Our Season Ten, Vegan Thanksgiving Television Special will be airing on several stations across the country this month! It’s a festive vegan meal featuring Pecan Stuffed Zucchini Boats, Maple Sweet Potatoes, Colorful Baby Greens Salad, and my Happy Apple Cake! Pecan Stuffed Zucchini Boats
Here’s an easy and delicious stuffed zucchini entrée to serve for a festive Thanksgiving or Christmas meal. Pecans add crunch and red bell peppers add a colorful flair. For a holiday meal, serve with Maple Sweet Potatoes on the side.
Mixed Baby Greens Salad
This is my jazzy holiday twist of my go-to green salad. I serve some version of this festive salad whenever I have company over. The balsamic dressing adds a touch of sophistication to the delicate greens.
Maple Sweet Potatoes
This colorful dish pairs well with many entrées and also makes a great addition to any holiday meal. As a bonus, it can be ready in thirty minutes or less.
Happy Apple Cake
This moist and delicious quick cake makes a wonderful finish to any winter holiday meal to serve in place of (or alongside) your favorite holiday pie! Plus it serves double-duty for a yummy holiday breakfast sweet! If you would like this cake to be gluten-free, purchase certified gluten-free oat flour. For a festive flair, serve some vegan whipped topping on the side.
Bonus recipe: Pumpkin Pie Spiced Butternut Squash Soup
I like to serve this easy and impressive soup during the winter holidays, but it is wonderful to serve any time of year. An extra pop of cinnamon and some sweet maple syrup both add zing to this smooth and flavorful potage.
