My Vegan Thanksgiving Menu is a festive vegan meal featuring Pecan Stuffed Zucchini Boats, Maple Sweet Potatoes, Pumpkin Pie Spiced Butternut Soup, Colorful Baby Greens Salad, and Happy Apple Cake!
FIRST COURSE: Pumpkin Pie Spiced Butternut Squash Soup – I like to serve this easy and impressive soup during the winter holidays, but it is wonderful to serve any time of year. An extra pop of cinnamon and some sweet maple syrup both add zing to this smooth and flavorful potage.
SECOND COURSE: Mixed Baby Greens Salad with Cranberrries – This is my jazzy holiday, easy green salad. I serve some version of this festive salad whenever I have company over. The balsamic dressing adds a touch of sophistication to the delicate greens.
MAIN DISH: Pecan Stuffed Zucchini Boats – Here’s an easy and delicious stuffed zucchini entrée to serve for a festive Thanksgiving or Christmas meal. Pecans add crunch and red bell peppers add a colorful flair. For a holiday meal, serve with Maple Sweet Potatoes on the side.
SIDE DISH: Maple Sweet Potatoes – This colorful dish pairs well with many entrées and also makes a great addition to any holiday meal. As a bonus, it can be ready in thirty minutes or less.
