These tasty pizza-style tortillas are quick to assemble and they’re so yummy! When you crave a pizza, but are short on time, these tantalizing pies will surely please.

You can use store bought vegan cheese, make a homemade vegan “feta” (recipe included below), or if you prefer, simply omit the vegan cheese.

Anyway you slice it, this easy and delicious “pizza” makes a snazzy lunch or light supper to please the entire family.

TORTILLA PIZZA PIE

These tasty Tortilla Pizza Pies are quick to assemble and they’re so yummy!

INGREDIENTS:

4 whole-grain tortillas (gluten-free are fine)
8 to 12 ounces prepared vegan marinara sauce
1 teaspoon all-purpose seasoning, Italian seasoning blend, or dried basil
1/4 teaspoon crushed red pepper
½ medium zucchini, grated
6 to 8 queen green olives, with pimento sliced
1/2 small sweet onion, diced
11/2 cups bite-sized broccoli florets
8 heaping tablespoons (optional) shredded vegan cheese or "Jazzy Vegan Feta"

INSTRUCTIONS:

Preheat the oven to 350 degrees F. Line two large, rimmed baking sheets with unbleached parchment paper.

Arrange 2 tortillas on each baking sheet. Top each tortilla with one-quarter of the marinara sauce, all-purpose or Italian seasoning and crushed red pepper. Spread one-quarter of the zucchini, olives, onion, broccoli florets and optional vegan cheese evenly over the top of each tortilla.

Bake for 15 to 20 minutes, or until the vegan cheese is melted, tortillas are crisp and sauce is bubbling. Transfer the tortillas to wire racks and let cool for 5 minutes.

Transfer each tortilla to a cutting board and cut into 4 slices. Serve 4 slices per person.

Marinating the tofu in a lively combination of Mediterranean-style herbs and spices makes delightful vegan “cheese.” This Vegan “Feta” is updated with the yummy addition of mellow white miso paste, which kicks the flavor of the “feta” up a notch. Even if you’re not a fan of tofu, you’ll appreciate this tasty twist on a classic cheese.

8 ounces firm or extra-firm regular tofu, well-drained
1 ½ to 2 tablespoons freshly squeezed lemon juice, plus more as needed
1 tablespoon plus 2 teaspoons olive oil
1 teaspoon Italian seasoning blend
1 teaspoon mellow white miso (optional)
¼ teaspoon garlic powder
¼ teaspoon salt, plus more as needed

INSTRUCTIONS:

Put the tofu in a medium-sized bowl. Using your fingers or a fork, crumble the tofu until it resembles the texture of feta cheese. Add the lemon juice, oil, Italian seasoning, optional miso, garlic powder and salt. Gently stir to combine. Add more lemon juice or olive oil to taste, as desired. Cover and refrigerate a minimum of 2 hours and up to 12 hours.
