FIRST COURSE: Pumpkin Pie Spiced Butternut Squash Soup – I like to serve this easy and impressive soup during the winter holidays, but it’s wonderful to serve any time of year. Pumpkin pie spice, along with a pop of cinnamon and some sweet maple syrup, add zing to this smooth and flavorful potage.
SECOND COURSE: Mixed Baby Greens Salad with Cranberrries – This is my easy, jazzy holiday salad. I usually serve a version of this simple salad whenever I have company over. The balsamic dressing adds a touch of sophistication to the delicate greens, and dried cranberries add a festive holiday flair.
MAIN DISH: Pecan Stuffed Zucchini Boats – Here’s a delicious stuffed zucchini entrée to serve for a vegan Thanksgiving or any winter holiday meal. Pecans add crunch and red bell peppers add a colorful flair. Try serving my Maple Sweet Potatoes on the side.
SIDE DISH: Maple Sweet Potatoes – This colorful dish pairs well with many entrées and also makes a great addition to any holiday meal. As a bonus, it can be ready in thirty minutes or less.
DESSERT: Happy Apple Cake – This moist and delicious quick cake makes a wonderful finish to any winter holiday meal. You can serve this tasty cake in place of (or alongside) your favorite pie! Plus it serves double-duty (the next morning) for a yummy breakfast sweet! If you would like this cake to be gluten-free, purchase certified gluten-free oat flour. For a festive flair, serve VEGAN MAPLE TOFU WHIP on the side.
