My mom sometimes served Spaghetti and Meatballs for dinner. Like most children, I loved it! So I developed this surprisingly realistic vegan “meatball” recipe to be the centerpiece for a classic Italian-style meal! Serve this filling dish with a green salad or plant-based antipasto, along with garlic bread on the side, and you have a yummy, kiddo-friendly supper. For dessert? Chocolate cupcakes are a family favorite, and here I have made then vegan, gluten-free and soy-free! It’s a delicious dinner for any day of the week! This classic Italian-American staple, made vegan, will certainly impress your entire family. If needed, you can easily make these delicious vegan “meatballs” gluten-free, nut-free, and/or soy-free! Now that’s a tasty, plant-based “meatball!”

This colorful dish can be served on the side in place of a leafy green salad, displayed on an appetizer platter for a party, or offered as a first course for any festive meal! I like to roast the peppers and asparagus in advance, and serve them chilled with this simple-to-prepare antipasto.

This recipe is based on my grandmother’s classic garlic bread, which was always a favorite of mine. This tantalizing loaf, with its crispy crust and herbed, soft, and steamy inside, is bursting with flavor. In other words . . . perfection!

These tempting vegan, soy-free, and gluten-free chocolate cupcakes are delicious topped with my luscious, plant-based frosting. They make a festive dessert for a weeknight meal, perfect alternative to a birthday cake, or serve them for any “special occasion” treat!
