Green bean casserole is a holiday favorite. My mother served it for both Thanksgiving and Christmas and I always loved it! The amazing Nava Atlas has created a vegan green bean casserole recipe that easily updates the comfort food classic and she is sharing it with us today! Thank you Nava!

To make your holiday meal preparation easier, Nava’s recipe offers the option of using frozen cut green beans, if fresh green beans are not available at your supermarket. However, Nava suggests that whole organic green beans are the ideal choice.
Nava’s Tip: Before going through the trouble of trimming the ends off of two pounds of green beans, steam a few to make sure they’re good — that is, that they become nice and tender-crisp without losing their color. (Photos by Hannah Kaminsky; BittersweetBlog.com.)
Vegan Green Bean Casserole, by Nava Atlas
Nava’s brilliant version of this classic holiday casserole gets its creaminess with thickened plant-based milk, or, for extra richness, plant-based creamer, and a bit of vegan cheese. Lots of fresh mushrooms become part of the sauce as well. Get the recipe HERE.
On another note! If you love cats like I love cats, you’ll adore Nava’s fantastic new book! “Inspired by Cats: Writers and Their Mews(es)” features Nava’s humorous anecdotes from history’s most notable cat-loving writers, along with one-of-a-kind illustrations by illustrator Bob Eckstein. Each charming story celebrates the “pawsitively” purrfect relationships between renowned authors and their beloved cats! Learn more or purchase copies HERE or wherever books are sold! (This beautiful book makes a wonderful holiday gift!)
