Spaghetti Squash “Capellini” with Sweet Pepper Marinara Sauce – WOW! Here’s a festive and fabulous way to use spaghetti squash for a main dish.
Slice the spaghetti squash in half, season it and roast the squash until tender. Scoop out the “noodles” and top them with my zippy, sweet pepper marinara sauce, and you have a filling meal!
Zucchini Fettuccini Alfredo – This enticing pasta impostor tastes like spaghetti topped with a rich and creamy sauce. Surprise!
It’s “zoodles” topped with dairy-free, gluten-free and completely vegan cashews “cream’ sauce! YUM!
