This delicious, plant-powered line-up makes a festive New Year’s Eve meal! The stars of the menu are my easy (but truly satisfying) Gingered Portobello Steaks, making a great substitute for a meat entrée. Below you will find recipes for a full, four course meal (plus three dessert options), but simply serving the entrée, side dishes, and dessert and dessert makes a “WOW” meal too!

I like to serve this snazzy menu for a New Year’s meal, but it is easy enough to make for a weeknight supper, any time! All of the recipes in this menu are vegan and gluten-free!

FIRST COURSE

Pumpkin Pie Spiced Butternut Squash Soup – I like to serve this easy and impressive Pumpkin Pie Spiced Butternut Squash Soup during the winter holidays, but it is wonderful to serve any time of year. An extra pop of cinnamon and some sweet maple syrup both add zing to this smooth and flavorful potage.

SALAD

Mixed Baby Greens Salad with Cranberries – This is my “go-to” green salad with a jazzy holiday twist! The cranberries add a seasonal flair, complemented by the sweet and tangy balsamic dressing.

MAIN DISH (entrée)

 Gingered Portobello Steaks – These delicious Gingered Portobello Steaks taste and look much like a conventional steak, making a great substitute for a meat entrée. I like to serve this snazzy dish for dinner parties, but it is easy enough to make for a weeknight meal, too!
