Easy Christmas Menu

Salad Course:

Baby Greens, Carrot and Cranberry Salad
I like to serve a green salad with nuts and dried cranberries during the winter holidays. This festive Baby Greens, Carrot and Cranberry Salad celebrates the season with healthy ingredients, vibrant colors, tantalizing textures and delicious flavors!

Soup Course:

Quick Sweet Potato Soup
Quick and jazzylicious! This tummy-warming Quick Sweet Potato Soup makes a lovely luncheon or supper entrée but serves equally well as a tasty soup course for a festive meal.

Main Course:

Stuffed Green Bell Peppers
Featuring a meaty-tasting seitan and hearty brown rice stuffing, these beautiful bells satiate omnivores and vegans alike. Ready for the oven in under 20 minutes, these six-ingredient wonders are equally ideal for a holiday party or weeknight supper. Serve over pasta for an elegant presentation. For a gluten-free option, you can use cooked black or white beans in place of the seitan!

Dessert:

Chocolate Party Parfaits with Mocha “Cream”
These divinely rich Chocolate Party Parfaits with Mocha “Cream” make a glorious finish to any holiday meal. Serve this festive dessert at your soirée and your guests will be begging for the recipe!

Appetizer or First Course:

Raw Veggie Kebabs
Here, everyday veggies are threaded onto mini skewers to give them a new look for a festive first course or out-of-the-ordinary hors d’oeuvres. You can make these Raw Veggie Kebabs with your choice of veggies, like cucumber slices in place of zucchini or canned artichoke hearts in place of the peppers.

Soup course:

Pumpkin Pie Spiced Butternut Squash Soup
I like to serve this easy and impressive Pumpkin Pie Spiced Butternut Squash Soup during the winter holidays, but it is wonderful to serve any time of year. An extra pop of cinnamon and some sweet maple syrup both add zing to this smooth and flavorful potage.

Main Course:

Festive Stuffed Peppers
These delightful Festive Stuffed Peppers are perfect to serve for a vegan AND gluten-free holiday supper. This festive entrée features quinoa, pecans, spinach, and other nutritious ingredients to create a colorful and tasty dish that’s perfect to serve for a casual family supper or celebratory dinner. Serve with Buttery Green Beans or Broccoli with Sweet Tamari-Onion Sauce on the side.

Dessert:

Date-Nut Snowballs
 These quick-to-prepare, Date-Nut Snowballs are fun to serve at holiday time. A cross between a soft cookie and a truffle, I like to arrange them on a colorful plate, set them in the center of the table, and watch ‘em disappear! Serve with vegan ice “cream” for a festive presentation.
