Autumn is the time for seasonal squash recipes. I love creating delicious dishes using squash; like soups, casseroles, quiche, pasta, risotto, zoodles, appetizers, stuffed squash, baked squash, and even desserts!

Some of my favorite varieties to cook with are zucchini, summer squash, butternut squash, acorn squash, and spaghetti squash. Here are 15 of my “jazzed up” vegan squash recipes for fantastic fall meals!
