ABOUT THE RECIPE:

This dish pairs well with many entrées and also makes a great addition to any holiday meal. As a bonus, it can be ready in thirty minutes or less.

INGREDIENTS:

3 medium sweet potatoes or yams, peeled and cubed
2 tablespoons vegan buttery spread, plus more as needed
1 tablespoon maple syrup
1⁄4 to 1⁄2 teaspoon pumpkin pie spice
1⁄4 teaspoon sea salt

INSTRUCTIONS:

Steam the sweet potatoes until soft, 20 to 25 minutes. Transfer to a large bowl. Add the vegan buttery spread, maple syrup, pumpkin pie spice, and salt. Mash with a potato masher until smooth, adding a bit more margarine if the potatoes seem dry. Serve immediately.
