My mom often gave us Stuffed Celery Sticks filled with cream cheese when I was a kid. Here are a few options to make this classic into a healthy plant-based snack or starter.
MAKES 6 SERVINGS
INGREDIENTS:
12 large celery sticks, washed with tough ends trimmed
12 tablespoons nut or seed butter (almond, cashew, hazelnut, sunflower or peanut butter)
INSTRUCTIONS:
Spread a generous tablespoon of your favorite nut or seed butter (see note) into each celery stick. Arrange on a platter and serve.
VARIATIONS: Substitute vegan cream cheese or your favorite hummus for the nut (or seed) butter.
Chef’s note: If you are gluten free, be certain to purchase certified gluten-free nut butters, vegan cream cheese and/or hummus.
