ABOUT THE RECIPE:
Vegan Deviled “Eggs” are super easy, nutritious and delicious! These cute little devils beautifully take the place of a classic stuffed egg.
Serves 5
INGREDIENTS:
10 to 12 Pee-Wee white potatoes or Dutch baby white potatoes, (or your favorite baby potato) steamed and well-chilled
1 container store-bought, prepared hummus (any flavor, choose your favorite, see note)
INSTRUCTIONS:
Cut each steamed and chilled potato in half lengthwise. Hollow out a cavity in each potato half with a melon baller, to resemble hard boiled egg halves. Pipe or spoon some hummus into each cavity. For a festive presentation, garnish with a sprig of fresh parsley or basil, and serve!
Chef's Note: If preferred, use your own homemade hummus in this recipe!
