Summer Cucumber Salad

ABOUT THE RECIPE:

This warm-weather staple is inspired by my grandma’s recipe. A few seasonal fresh ingredients paired with a pop of vinegar and touch of maple syrup make for a truly refreshing, oil-free Summer Cucumber Salad.

Makes 2 servings

INGREDIENTS:

1 large cucumber, thinly sliced (peeling the cucumbers is optional)
1/2 large sweet or red onion, thinly sliced
1 tablespoon balsamic vinegar
1 tablespoon maple syrup
1/4 teaspoon paprika, plus more for garnish
Salt, to taste
Freshly ground black pepper, to taste

INSTRUCTIONS:

Put the cucumber and onion in a medium-sized bowl.

Put the balsamic vinegar, maple syrup, and paprika in a small bowl and briskly whisk to combine. Pour the dressing over the cucumbers and onions and gently toss to coat. Season with salt and pepper to taste.

Cover and refrigerate for 1 to 4 hours, to allow the flavors to develop. Sprinkle with additional paprika if desired, and serve chilled.
