Romaine, Mini-Pepper and Walnut Salad

This Romaine, Mini-Pepper and Walnut Salad is a simple salad that packs a punch of flavor and crunch. This dish makes the perfect accompaniment to a company meal or weeknight family supper.

INGREDIENTS:

SALAD

  • 1 medium head romaine, torn in bite-sized pieces
  • 6 to 8 mini sweet peppers, seeded and thinly sliced
  • 1/3 cup chopped walnuts

DRESSING

  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon dijon mustard

TOPPING

  • Shredded or grated vegan parmesan cheese (optional)

INSTRUCTIONS:

Put all of the SALAD ingredients into a large bowl. Put all of the DRESSING ingredients in to a small bowl and whisk to emulsify. Pour dressing over salad and toss to combine. Top with optional vegan parmesan cheese and serve.
