Quick Tomato Salad

ABOUT THE RECIPE:

Quick Tomato Salad is one of my summer staples! It's perfect to serve when tomatoes are at the height of their season and readily available at local farmers’ markets. Using just four simple ingredients, you’ll be surprised at the full-bodied flavor of this fresh, colorful salad.

Makes 2 to 3 servings

INGREDIENTS:

1 pint grape or cherry tomatoes, halved
1 to 2 small cloves garlic, minced
1/8 teaspoon salt
Freshly ground pepper

INSTRUCTIONS:

Put the tomatoes halves in a medium-sized bowl and squeeze them gently with clean hands in order to release the seeds and some of the juices. (This will provide the "dressing" for the salad.)

Add the garlic, salt and pepper and gently stir together to combine. Let sit at room temperature for 5 to 20 minutes (to allow the flavors to develop), and serve.
