Quick Jazzy Quinoa

ABOUT THE RECIPE:

This delicious quinoa dish is enhanced with delicate flavors, combined with a welcome nutty taste. Quinoa makes a great substitute for brown rice and it's quick to prepare, cooking in about 15 minutes!

Makes 4 servings

INGREDIENTS:

1 cup white quinoa, rinsed very well and drained
2 cups water, plus more if needed
1 vegetable bouillon cube, crumbled
2 tablespoons finely chopped fresh parsley (plus more for garnish)

INSTRUCTIONS:

Put the quinoa, water, and crumbled bouillon cube in a medium-sized sauce pan. Cover and bring to a boil over medium heat. Decrease the heat to medium-low and continue to simmer for 15 to 17 minutes. Cook until all of the liquid is absorbed, adding a bit more water if the pan becomes dry before the quinoa is soft. Fluff with a fork. Cover and remove from heat. Stir in 2 tablespoons of parsley. Let the quinoa stand for 5 to 10 minutes. Sprinkle more parsley over the top, and serve!
