ABOUT THE RECIPE:
Quick Baby Spinach Salad is just that: quick and easy and packed with great taste! This recipe is easily doubled or tripled.
Makes 2 to 3 servings
INGREDIENTS:
3 cups lightly packed baby spinach
2 to 3 teaspoons balsamic vinegar, plus more if needed
1 to 2 teaspoons maple syrup, plus more if needed
Salt, to taste
Freshly ground black pepper, to taste
INSTRUCTIONS:
Put the spinach in a medium-sized bowl.
To make the dressing, put the vinegar and maple syrup in a small bowl and briskly whisk until smooth (see note). Pour the dressing over the spinach and toss gently to coat the leaves. Taste and add more vinegar and/or maple syrup if needed. Top with salt and pepper to taste.
NOTE: If desired, add 1 tablespoon of extra-virgin olive oil to the dressing before whisking it together.
