Makes 3 to 4 servings
INGREDIENTS:
2¼ cups frozen raspberries
8 ounces soft regular or silken tofu, drained
3 tablespoons maple syrup
¼ to ½ teaspoon vanilla extract
INSTRUCTIONS:
Set aside 3 to 4 raspberries for garnish. Put 5 or 6 raspberries in three to four champagne glasses or small dessert dishes. Put the tofu, maple syrup, vanilla extract, and remaining raspberries in a blender or food processor and process until very smooth and creamy.
Spoon the mixture into the glasses or dessert dishes and garnish each with a raspberry. Serve immediately.
