ABOUT THE RECIPE:
These simple nibbles were such a hit at my New Year’s Day party last year, I just had to share! Using pre-made guacamole makes this Guacamole Mini-Peppers recipe super quick, but for a more customized version, use my recipe for Smoky and Spicy Guacamole (recipe below).
Makes 6 servings
INGREDIENTS:
12 to 16 ounces guacamole (store-bought or use the "Smoky and Spicy Guacamole" recipe below)
1 package (8 ounces) mini sweet peppers, cut in half lengthwise and seeded
½ teaspoon chili powder, plus more as needed
INSTRUCTIONS:
Put a heaping tablespoon of the guacamole into each pepper half. Arrange the peppers in a pleasing manner on a pretty platter. Dust with chili powder, to taste.
SMOKY AND SPICY GUACAMOLE
Makes 4 to 6 servings
INGREDIENTS:
2 large ripe avocados
2 tablespoons freshly squeezed lemon juice
1 small clove garlic, minced
1 teaspoon chili powder
1/2 teaspoon smoked paprika
¼ teaspoon sea salt, plus more as needed
1⁄8 teaspoon cayenne pepper
INSTRUCTIONS:
Peel, pit, and rough chop the avocados. Put the chopped avocados, lemon juice, garlic, chili powder, smoked paprika, sea salt and cayenne pepper in a medium-sized bowl and mash with a potato masher or large fork until combined.
