Garlicky Roasted Green Peppers are an easy and flavorful way to serve fresh green peppers, making a wholesome side dish for a plant-powered meal.
Makes 4 servings
INGREDIENTS:
2 very large (or 3 medium) green peppers
1 tablespoon plus 1 teaspoon extra-virgin olive oil
½ teaspoon garlic powder
Salt, to taste
Freshly ground black pepper, to taste
Preheat the oven to 400° F. Line a medium-sized, rimmed baking sheet with unbleached parchment paper.
Remove the seeds from the peppers and cut each pepper into 8 thick slices. Put the pepper slices, olive oil, garlic powder, salt, and pepper into a medium-sized bowl and toss using a large spoon until the pepper slices are evenly coated.
Arrange the pepper slices in a single layer, skin side down, on the lined baking sheet. Bake for 25 to 40 minutes, or until soft and the bottoms of the peppers are very brown. Cool for 5 minutes and serve.
