Five-Ingredient Black Bean Casserole

ABOUT THE RECIPE:

Five ingredients. One mixing bowl. One casserole dish. One oven. Delicious dinner. Enough said!

Makes 4 To 6 servings

INGREDIENTS:

2 cans (15 ounces each) black beans, drained and rinsed
1 cup vegan marinara sauce, plus more as needed
1 medium sweet onion, chopped

1⁄2 teaspoon garlic powder

2 heaping tablespoons maple syrup or date syrup

INSTRUCTIONS:

Preheat the oven to 375 degrees F. Put all of the ingredients in a large bowl and stir gently to combine.

Pour the mixture into a medium-sized casserole dish. Cover and bake for 50 minutes to 1 hour. Check the casserole after 30 to 40 minutes, and if the black bean mixture is becoming dry, add more marinara sauce, to taste.

If desired, serve in deep bowls spooned over brown rice, quinoa, or a baked potato.
