Confetti Oven Fries

ABOUT THE RECIPE:

Craving French fries? This tempting spud recipe features a colorful mix of russet potatoes and sweet potatoes that turn into delicious “fries” when tossed with olive oil, along with some jazzy seasonings, and then simply baked in the oven. Fun food at its best!

Makes 4 to 6 servings

INGREDIENTS:

2 very large russet potatoes, scrubbed
2 very large sweet potatoes, scrubbed
1 tablespoon extra-virgin olive oil, plus more as needed
1 teaspoon Italian seasoning blend (or all-purpose seasoning)
3/4 teaspoon chili powder
3/4 teaspoon garlic powder
1/2 teaspoon salt, plus more as needed

INSTRUCTIONS:

Preheat the oven to 400 degrees F. Line several large, rimmed baking sheets with parchment paper.

Cut the potatoes into matchsticks or shoestrings; the thinner they are, the crispier the fries will be. Put the potatoes, olive oil, chili powder, garlic powder, and seasoning in a large bowl and toss gently until the potatoes are evenly coated. Add a bit more olive oil if the potatoes still seem dry. Spread the potatoes in a single layer on the lined baking sheets.

Bake for 25 minutes and remove from the oven. Sprinkle with the salt and stir gently to coat. Bake for an additional 15 to 20 minutes or until soft inside, slightly crisp outside, and browned along the edges. Serve immediately.
