ABOUT THE RECIPE:
This Avocado-Miso Dip is a tasty twist on a classic that’s perfect to serve for a filling snack or to spread on toast for a light lunch or tasty breakfast. Miso adds umami flavor that pairs beautifully with creamy avocado. This dandy dip makes a nice holiday appetizer served with crisp crackers and colorful crudités on the side.
SERVES 1 TO 2
INGREDIENTS:
1 medium ripe avocado, cut in half and pitted
1 heaping teaspoon mellow white miso or chickpea miso (see note), plus more if needed
INSTRUCTIONS:
Scoop the avocado flesh out of the avocado halves and place it in a medium-sized bowl. Add 1 heaping teaspoon of miso. Taste and add more miso if desired.
Vigorously stir or mash the avocado and miso together with a fork to combine. Serve for a party dip with crudités or crackers on the side; or spread on whole-grain toast for a nutritious breakfast treat, quick lunch or "pick-me-up" snack.
Chef's note: If preferred, use your favorite flavor of miso in place of the mellow white miso or chickpea miso.
