Almond “Creamy” Pudding

ABOUT THE RECIPE:

Got 5 minutes? That's all the time you need to prepare this rich tasting Almond “Creamy” Pudding. The almond butter makes it super smooth and super yummy!

Makes 4 to 6 servings

INGREDIENTS:

14 to 16 ounces soft, firm, or extra-firm regular tofu, well-drained
6 heaping tablespoons smooth almond butter (see note for substitutions)
6 heaping tablespoons maple syrup
4 to 6 almonds, for garnish

INSTRUCTIONS:

Put the tofu, almond butter, and maple syrup in a blender and process until smooth and creamy. Spoon into six espresso cups, four martini glasses, or four small dessert dishes and refrigerate for 3 to 6 hours. Serve chilled, garnished with a whole almond on top, if desired.

NOTE: If needed, you can use your preferred seed or nut butter in place of the almond butter in this easy pudding recipe.
