Vegan Smoked Maple “Bacon”

ABOUT THE RECIPE:

Craving bacon? This amazing recipe uses tofu covered in a tempting sweet and tangy marinade, then baked to “bacon-y” perfection!

INGREDIENTS:

4 tablespoons maple syrup, divided
1 tablespoon dijon mustard
1 tablespoon tamari
1 tablespoon extra-virgin olive oil
1 tablespoon water
1 teaspoon balsamic vinegar
1 teaspoon smoked paprika
1⁄2 teaspoon garlic powder
1 block (15 to 16 ounces) super-firm tofu, drained (for a soy-free option, see Maple Roasted Portobello “Bacon”)

INSTRUCTIONS:

Preheat the oven to 400 degrees F. Line a 13 x 9-inch (or similarly sized) rimmed baking pan with foil, then top it with unbleached parchment paper.

To make the marinade, put 2 tablespoons maple syrup, mustard, tamari, olive oil, water, vinegar, paprika, and garlic powder into a small bowl and briskly whisk to combine.

Carefully cut the tofu into 24 to 28 very thin slices to resemble slices of bacon. Arrange the tofu slices in a snug, even layer in the prepared pan. Pour the marinade over the tofu slices. Cover with foil and bake for 20 minutes. Carefully uncover the pan (steam will be very hot!) and bake the tofu for 25 minutes more, or until golden brown.

Put the pan on a wire rack. Spread 2 tablespoons maple syrup in a very thin layer over the tofu slices and bake (uncovered) for an additional 10 to 12 minutes, or until the tofu “bacon” is golden brown and crispy around the edges. Serve warm.
