Sweet Arugula Salad with Maple-Balsamic Dressing

ABOUT THE RECIPE:

Sweet Arugula Salad has a maple-y dressing paired with tangy dried cranberries, crisp Granny Smith apples and spicy arugula makes a tempting salad combination.

Makes 2 to 4 servings

INGREDIENTS:

SALAD
5 ounces baby arugula, washed and dried
1 medium sweet orange or red pepper, chopped
1 small granny smith apple, peeled, cored, and chopped
1/3 cup sweetened dried cranberries
1/3 cup roasted salted almonds

DRESSING
2 tablespoons freshly squeezed lemon juice
2 tablespoons maple syrup
1 teaspoon extra-virgin olive oil
1 teaspoon balsamic vinegar
Sea salt, to taste
Freshly ground black pepper, to taste

INSTRUCTIONS:

Put all of the salad ingredients in a large bowl and gently toss with large tongs, to combine.
Put all of the dressing ingredients in a small bowl and briskly whisk to emulsify.
Pour the dressing over the salad and gently toss, to coat. Serve immediately.
