Roasted Zucchini Slices and Summer Squash Slices

ABOUT THE RECIPE:

Farm fresh zucchini or summer squash is tossed with a few flavorings and roasted in the oven makes for a simple side dish for an easy supper.

Makes 2 to 3 servings

INGREDIENTS:

2 medium zucchini, each sliced into 10 to 12 diagonal slices
1½ tablespoons extra-virgin olive oil
1 teaspoon garlic powder
Salt, to taste
Freshly ground black pepper, to taste

INSTRUCTIONS:

Preheat the oven to 400° F. Line a large, rimmed baking sheet with unbleached parchment paper.
Put the zucchini slices, olive oil, and garlic powder into a large bowl. Gently toss with a large spoon to thoroughly coat the slices with the oil and garlic powder. Arrange the zucchini slices in a single layer on the lined baking sheet. Sprinkle the zucchini with a generous amount of salt and pepper, to taste.

Bake for 30 to 40 minutes or until the zucchini slices are very golden and slightly crisp. Cool for 3 to 5 minutes and serve.

VARIATION: Smoky Summer Squash Slices – Replace the zucchini with 2 medium summer squash. Replace the garlic powder with smoked paprika. Proceed with recipe as directed.
