Petite Peas and Parsnips

ABOUT THE RECIPE:

Petite peas combined with tender, steamed parsnips make a flavorful and unique veggie side dish to serve for any casual or party supper.

MAKES 4 TO 6 SERVINGS

INGREDIENTS:

  • 4 medium parsnips, peeled and thinly sliced
  • 1 bag (16 ounces) frozen petite peas
  • 2 teaspoons vegan buttery spread
  • 1/4 teaspoon salt
  • Freshly ground pepper, to taste

INSTRUCTIONS:

Fit a steamer basket into a medium sauce pan with a tight-fitting lid. Add 2 inches of cold water, then add the parsnips. Cover and bring to a boil. Steam for 6 to 8 minutes, or until almost crisp tender. Add the frozen peas. Continue to steam 3 to 4 minutes more, or until the peas are completely heated through (hot) and the parsnips are soft. Transfer to a large bowl. Add the vegan buttery spread, salt, and pepper to taste. Toss gently until the parsnips and peas are evenly coated. Serve warm.
