Vegan Frozen Banana Creamy

ABOUT THE RECIPE:

A frozen dessert is especially refreshing as an afternoon snack or light dessert. This creamy concoction emulates the frozen custard I used to adore as a child. To achieve the ideal consistency, the bananas should be frozen for at least twenty-four hours before making this dessert and the dairy-free milk should be well chilled.

Makes 2 to 3 servings

INGREDIENTS:

3 large frozen bananas
1 to 1½ cups chilled vanilla dairy-free milk
3 to 4 teaspoons brown sugar or maple syrup

INSTRUCTIONS:

Put the bananas, dairy-free milk, and brown sugar in a blender or food processor and process until smooth and creamy, adding more dairy-free milk if needed to achieve desired consistency (see note for variation).

Pour the mixture into pretty dessert dishes or glasses. Sprinkle with the optional cocoa powder and serve immediately.

Variation: VEGAN BANANA CREAMY “MILKSHAKE” (pictured above): For a vegan “milkshake,” use a bit more dairy-free milk when blending and serve in pretty glasses with a colorful straw and/or dessert spoon.
