Ann’s Spicy Arugula Salad

ABOUT THE RECIPE:

Ann, our talented culinary supervisor for Season Six, created this fabulously fresh and delicious tasting Spicy Arugula Salad that pairs perfectly with almost any meal.

Makes 4 servings

INGREDIENTS:
SALAD:
4 cups very firmly packed baby arugula
1 medium tomato, diced
1/2 medium red onion, thinly sliced

DRESSING:
2 tablespoons extra-virgin olive oil
1/2 tablespoon finely chopped spring onion, white part only (optional)
1 tablespoon freshly squeezed lime juice
1 teaspoon maple syrup
Dash of cayenne pepper

GARNISH (optional)
Zesty Maple Almonds

INSTRUCTIONS:

Put all of the salad ingredients into a large bowl and gently toss with large tongs to combine.
Put all of the dressing ingredients in a small bowl and briskly whisk to emulsify. Pour the dressing over the salad and gently toss to coat. Garnish with Zesty Maple Almonds, if desired. Serve immediately.
