Summer Tomato Salad

2 large tomatoes, chopped

1 green bell pepper, chopped

1 large cucumber, peeled and sliced

1/2 vidalia onion, thinly sliced

2 tablespoons rice vinegar

2 tablespoons olive oil

3/4 teaspoon sea salt

Black pepper (to taste)

Pinch of sugar (optional)

Chop the veggies and place them into a large bowl with a lid. Add the vinegar, oil, salt, pepper, and optional sugar, and mix well. Cover and allow to marinate in the fridge for a few hours.
