Easy, delicious - creamy and nutritious. This simple dessert recipe really rocks, plus it doubles as a delightful breakfast pudding too. Totally jazzylicious.
Very Vanilla Rice Pudding
Makes 4 Servings
1 cup brown basmati rice
1 ½ cups nondairy milk
2 cups filtered or spring water
1/3 cup raisins
3 ½ tablespoons maple syrup
2 teaspoons vanilla extract
Put all of the ingredients in a medium sauce pan. Cover and bring to a low boil over medium heat. Decrease the heat to medium-low and simmer, stirring occasionally, for 50 to 60 minutes, or until the rice is very soft and creamy in texture. (Stir more often the last 20 minutes of cooking).
Remove cover and stir again. Cover and let set for 20 minutes. Serve warm.
