Earth Day is April 22, 2011~ One of the easiest ways that you can celebrate Earth Day is to cook a special earth day meal. If possible, plan a menu that uses some locally produced foods. Focus on organic plant-based options such as vegetables, fruits, grains and beans, as these foods use fewer resources to produce than some other less eco-friendly food choices. Decorate your table with reused, repurposed or recycled items. If you are looking for an easy and delicious vegan recipe to prepare, here is my “Recipe of the Week,” which is my Earth Day Black Bean Burritos! Click here for the full recipe. Vegan chef and author Christine Waltermyer joined me on Jazzy Vegetarian Radio today. We chatted about her fabulous new book, “Natural Vegan Kitchen." Christine shared her tasty recipe for Easy Scallion Hummus! Yummo. She talked about the “yin and yang” energies present in the food we eat and shared great tips for learning to savor mealtime, rather than eating on the run. She demystified “Kombu, ” and taught us how to prepare this healthful type of seaweed. Learn more about Christine at these online destinations!
