Heather Lounsbury’s Brussels Sprout Soup
2-3 cups vegetable stock
3 cups minced Brussels sprouts
1 cup diced potato
1/2 cup minced onion
½ teaspoon dried dill weed
Black pepper to taste
1/2 teaspoon minced parsley and chives
Put the vegetable broth, Brussels Sprouts, potato and onion in a medium saucepan and simmer for 15 to 20 minutes. Add pepper, dill, parsley and chives last 5 minutes of cooking. Serve hot!
